Naor comes from a family that lives and breathes culinary arts his sister is a chef, and his mother is a pastry chef.
He worked in Michelin-starred restaurants in New York, where, among the knives of world-renowned chefs, he realized that wine is not just a drink it’s a journey. He delved into the delicate art of pairing wine with food, weaving together stories and experiences, and even learned to match a dish like a specific sea fish with wine from the nearby lake.
This is how he created a kind of magic connecting all the elements into one complete experience.
Today, at Pago Pago restaurant, Naor brings that same philosophy to life: Greek nights, Italian nights, Spanish nights, and more.
Each evening is carefully crafted with precise wine pairings that match the taste and aroma to the place and the moment the sea in the background, the atmosphere, and a dish accompanied by wine that fulfills the story and elevates the experience this time in the heart of Eilat, against the stunning contrast of the blue sea and the red mountains.
Roger is the owner of the Jolly Roger wine bar.
His love for wine and gastronomy was born in a culinary home and later grew at Chakra restaurant in Jerusalem, where he was a founder and partner.
Between a meticulous kitchen and an ever-changing menu, Roger realized that the experience doesn’t begin on the plate it begins with a good glass of wine and a story.
Over the years, he also founded the Herzl Brewery, whose beers are sold throughout Israel. When he arrived in Eilat, he never imagined that this would be the place where his love for wine would deepen.
Roger found himself running a small wine distribution warehouse, and as more and more wineries were left without representation, he realized this wasn’t just an opportunity it was a calling.
And so The Garage – Jolly Roger was born: from a distribution center in the heart of Eilat’s old industrial zone, it has grown into a home for wine and local culture with garage nights, food, music, and, above all, people.
In 1977, Eran and his wife Doly joined the first Nahal group that would later establish Kibbutz Ortal in the northern Golan Heights.
In 1982, they were privileged to take part in the historic decision that made the kibbutz one of the founding partners of the Golan Heights Winery. That same year, Doly and Eran planted the winery’s very first vines marking the beginning of their deep and lasting connection to the world of wine.
After leaving the kibbutz, Eran held on to his passion for vineyards and the aromas of harvest season. In 1999, he decided to turn that passion into a calling.
When he approached the Golan Heights Winery and offered to distribute their wines in Eilat the circle was complete.
This is how Eilat Wines was born.

Dror, a native of Eilat, has extensive experience in the restaurant industry.
Ten years ago, he returned from London to Eilat and purchased Pedro a long-standing chef and steakhouse restaurant nestled in a magical, colorful garden in the heart of an old neighborhood. The restaurant offers a sensory experience featuring fine meats, fish, seafood, and chef’s meals at the bar, with a focus on premium ingredients and quality Israeli wines.
Dror is one of Eilat’s leading wine figures, combining a love of wine with warm hospitality and unique culinary insight. He brings a clear vision of creating an accessible, transparent, and local wine culture which led him to recently establish a large wine bar at the center of the restaurant.
Dror believes that wine is an inseparable part of the dining experience like music or, in Eilat’s case, air conditioning. That’s why on certain evenings, he chooses not to charge corkage fees, believing that when diners bring a beloved bottle from home, it creates an authentic and shared atmosphere.
And speaking of authenticity, Dror a sensitive, family-oriented man created a private wine brand named “Mishmish” (Apricot), a fruity white wine named after his daughter’s nickname, with a watercolor label painted by his artist wife.
From a young age, Yuval was drawn to the world of wine.
The turning point came when a friend told him about a rare wine, and the two set out to find it an adventure that soon grew into a passion and a deep love for wine.
After purchasing dozens of bottles, they bought wine fridges and began filling them, as the collection grew and so did Yuval’s connection to wine, which became an inseparable part of his lifestyle.
Alongside his love for new flavors came a desire to share this experience with others.
Yuval founded the wine bar at the legendary Rechter Center out of a wish to make wine culture accessible to locals and visitors offering an intimate and authentic atmosphere.
The wines he curates come from small, unique producers from Israel and around the world some infused with the taste of the earth, others with the essence of the sea.
At Yuval’s place, you’ll find bottles from the Canary Islands, Sicily, Crete, and more.
All are small wineries with big flavors and in every bottle, there’s a soul.

Uri Shahar never studied winemaking or culinary arts, yet his love for flavors, the land, and people naturally led him into the world of wine.
In 2002, he began making wine at home purely out of passion.
What started as a tiny winery in a small residential unit gradually grew, and by 2008 he had already won a medal in an international wine competition.
This success led the then-mayor of Eilat to offer him the chance to establish a real local winery in the city. Despite the challenging climate and remote location, Uri accepted the challenge planting vineyards, building a new winery with a visitors’ center, and turning the dream of desert winemaking into reality.
For Uri, wine is not just a profession it’s a way of life, a calling, and a passion.
He continues to produce high-quality wines, host visitors, and spread wine culture throughout the south, driven by the belief that every good wine begins with a good story.

Ohad Levy is not just a chef with an impressive track record at top restaurants like Cicchetti, Herbert Samuel, and Social Club — he’s also the one who made wine an essential part of the hospitality DNA in Eilat.
After conquering Tel Aviv and opening Mamo and Alter in the southern city, Ohad embarked on a new journey: Lily.
Lily is more than just a restaurant it’s a philosophy: simple, tasty, and pleasant dining, with a touch of alcohol that opens the heart. A warm home for simple, approachable Mediterranean cuisine wrapped in deep love for both food and wine all by the sea.

Ohad loves to start an evening with a sweet vermouth, a bottle of white wine, and a table full of small plates and that’s exactly the spirit of his new restaurant.
This time, beyond being the chef, he also took on the role of sommelier, driven by a genuine desire to offer wine in an approachable way highlighting small wineries, unconventional wines, accessible prices, and an atmosphere that feels like home.

Itan manages Slovatek, Eilat’s oldest and leading beverage shop with two branches, personal service, and an impressive selection of wines and alcoholic drinks from top brands in Israel and around the world.
They say every bottle holds a story and in Slovatek’s case, it’s a family story.
It all began with Haim Cohen, Itan’s father, who started out at Slovatek as a truck driver. After working in the hotel industry, he returned to manage Slovatek and one day bought the place, transforming it into what it is today.
Itan grew up among the boxes, bottles, and aromas and fell in love, not only with the drinks themselves, but with what lies behind them: the culture, the people, and the stories.
Today, he is an inseparable part of the business, carefully selecting every wine. The shop has become a meeting place for wine lovers from Eilat and beyond, with customers gathering daily to sit together and talk about wine.
The store also hosts tasting events and workshops that bring people closer to wine through experience.
Between the aisles, you’ll find an impressive wine room, a curated collection of Israeli boutique wines, and monthly tastings from selected wineries.
Slovatek is not just a place to buy from it’s an experience of taste, culture, and heart.
Nof Sheli, a private chef and culinary entrepreneur, brings a fresh wave of flavors, experiences, and culture to Eilat.
A graduate of Le Cordon Bleu and former cook at the acclaimed OCD restaurant, Nof creates inspiring connections between food, wine, and people. Over the past decade, he has earned a name for himself as a creative chef and exceptional host, and today he leads several projects that are reshaping the local culinary scene.
Among his projects are “Shevet” intimate tasting evenings that tell a story through food, wine, and music; “Sahar” a monthly wine event series featuring tastings and lectures; and “Canaan” his weekly collaboration with Hof HaDekel beach, offering top-tier cuisine by the sea alongside some of the city’s most talented musicians. These and other ventures are helping to advance Eilat’s unique culinary culture.
Nof’s cuisine is modern Israeli, rooted in open fire cooking, local ingredients, and international techniques, inspired by his personal travels and his love for the stories behind every dish.
His vision is simple yet ambitious: to place Eilat on Israel’s culinary and wine map.

A culinary institution born from the deep love of his late father, Eddie Hatz, for food, people, and the good life.
As a child, Ashley would watch from the sidelines as his father greeted guests with a warm smile, shared stories from his travels around the world, and created meals that filled not only the stomach but also the heart.
“He was a true charmer,” Ashley says with pride.
After Eddie’s passing, Ashley faced a daunting challenge to preserve the iconic family legacy while also leaving his own personal mark.
He took the lead not only in the kitchen and management, but also in developing a rich and precise wine list to accompany the restaurant’s beloved dishes.

He doesn’t see wine as a mere side element, but as a central part of the experience one that adds depth, sparks conversation around the table, and brings a lasting sense of celebration.
