Eddie’s Hideaway

In the heart of Eilat’s industrial zone lies the legendary gourmet restaurant known to every local and tourist Eddie’s Hideaway. Since opening in 1979, it has become a warm home for lovers of excellent food, fine wine, and an atmosphere like no other. The late Eddie Hatz, the restaurant’s founder, immigrated to Israel from New York and brought with him the flavors he absorbed during his travels around the world. He combined the American cuisine he grew up with and refined European touches from France and Italy. The perfectly cooked filet mignon, rich pastas, and indulgent desserts quickly became iconic among both regular diners and visiting tourists. Today, his son Ashley continues Eddie’s legacy preserving those iconic flavors while adding a new dimension: wine culture. The menu now includes a carefully curated wine selection, chosen to complement each dish and enhance the culinary experience.

The Tribe Meal is a contemporary Israeli tasting experience rooted in local ingredients, open-fire craftsmanship, and a culinary language that bridges past and present. The culinary vision draws inspiration from ancient Israel—the earth, simplicity, and directness—while integrating modern Japanese and French techniques, with an emphasis on precision, clean flavors, and the distinct presence of the raw materials. The kitchen is characterized by clean, uncluttered dishes, where fire serves as a guiding principle: it dictates the rhythm, character, and atmosphere, shaping the entire dining experience. The meal is structured as a flowing sequence of shared plates, creating a warm, open, and connective hospitality experience around the table. The focus is not on showpiece dishes, but on precise, accessible, and "present" food—the kind that allows guests to be an active part of the evening. Israeli identity is expressed not as a cliché, but as a culinary stance: a connection to the sea and the desert, to seasonality, to the act of sitting together, and to the dialogue around the table. This is an experience that seeks to create a human encounter through food, offering a contemporary expression of a deep, direct, and precise Israeli cuisine. “The Tribe Meal is a form of unity for the twelve tribes in my small piece of land, gathered around one table.” — Nof Shelly
